Mountains and seas pickles (さんかいづけ) are local cooking of Niigata and are the kind "processing pickle" of the pickle.

Summary
I made herring roe and the vegetables which I chopped vegetables or fish pickled in sake lees which I soaked in sake lees. It is one article eaten throughout Japan now.
As for the origin of the name, "the mountain products" of farm products move to "the seafood" of marine products.
Characteristic
Salt pulls herring roe (salting artefact), and it is assumed that I made a cucumber, a white muskmelon, a Japanese radish food preserved in salt (salting artefact) and chops them and pickles it to the sake lees which mixed spice, seasoning and lets you mature. The case that Wasabizuke is used for to sake lees is in many forms nationwide.
