Summary
Founder, Usami Taro required opens the udon shop "Matsuba shop main office" taking advantage of a sushi bar of the service having discontinued its business in (1893) in 1893.
At first as a garnish of the udon for the inarizushi was salty-sweet, and appeared with the fried bean curd which boiled as a small plate. However, I decided to pick up a fried bean curd on the udon, and to start it together because there were many visitors who just put a fried bean curd in udon, and ate. This is considered to be an ancestor of the fox udon [1]; [2] (there are various opinions, and refer to fox (noodles) # history).
As for the materials, the fried bean curd orders the same thing from the Nishiki, Kyoto market at the time of the establishment of a business using kombu from Hokkaido, wheat flour from Kumamoto.
