Millet cake
The millet cake (I have a bubble foxtail millet 粔籹) is a popular cake of Osaka.
The cake which assumes rice raw materials。 I mixed the syrup which I crushed rice finely (like a foxtail millet) (it is included in a name with foxtail millet (bubble), but is not a foxtail millet) and made with starch syrup and ginger, sesame and hardened it. Some raw materials are crushed in comparison with a hard millet-and-rice cake coarsely, and the texture is rather light. It is got close as a cake representing Osaka for a long time.

The history and origin
The thing which hardens 糒 with honey in the Nara era, and was given to God as good harvest prayer is assumed the origin. I was eaten among some nobles in the Muromachi era. I got popularity as the lucky food which Osaka prospered by Osaka-jo Castle construction of a castle of Hideyoshi Toyotomi, and "raised the body, and raised a house, and woke up a country". Osaka was called "a kitchen of the world" in the Edo era and the materials such as the high quality rice or candy were relatively cheap and were available because it was a center of the economy.
