It is an enzyme catalyzing glycerol dehydrase (Glycerol dehydratase, EC 4.2.1.30), the following chemical reactions.
- Glycerol3-hydroxy propanal + H2O
Therefore, as for the substrate of this enzyme, only as for glycerol, the product is two of 3-hydroxy propanal and the water.
These enzymes are classified in lyase particularly hydrolyase cutting carbon - oxygen combination. The systematic name glycerol hydrolyase (the 3-hydroxy propanal formation) (glycerol hydro-lyase (3-hydroxypropanol-forming)) である. I am called glycerol dehydrase, glycerol hydro-lyase elsewhere.
