Michel Bras's
The chef who runs auberge (Auberge) "Michel Bras" in the ラギオール (Laguiole) village which is famous for the sommelier knife of the France middle southern district Aube rack (l'Aubrac) district (in the district including Auvergne area area, Midi-Pyrenees area area, the Languedoc-Roussillon area area) which the Michel Bras's (Michel Bras, November 4, 1946 -) is named a cook creating a dish by nature, and is said to be it when I represent French food world of the 21st century.
The Michel Bras's studied under a famous chef and had not studied it in a prestigious restaurant and learned from mother who made a dish in a kitchen of auberge "roux マズュック" (Lou Mazuc) which parents ran and built the world of his original dish with the earth of the Aube rack district while it was empty.

- 1992: The restaurant "Michel Bras's" opening that moves the shop from "roux マズュック" to the hill of the Aube rack plateau of 5km, and is new
- 1999: I get three Michelin star (I maintain three star as of 2007)
- 2002: I open "Michelle brass toe shop ジャポン" (Michel Bras TOYA Japon) becoming the only branch in "the the Windsor hotel Toya resort & spa" of the shore of Hokkaido Lake Toya.
